Pork Coppa Steak

1 Coppa steaks per package, 1.3 lb avg.

One coppa shoulder steak. This steak is cut from the neck muscle running down to the shoulder. In Italy and France this muscle is traditionally dry-aged and made into delicate charcuterie similar to prosciutto. Our coppa steak is beautifully marbled and subsequently has a richer flavor than the pork chop. It can be seared or brazed, being careful not to overcook.
